At no point was their a huge takeover that changed the eastern Roman empire (or Byzantine empire) until the Ottomans came into power in the 15th century. Byzantine empire was a different name for classical era Rome and medieval. Rome the city fell however what she controlled and made in her time didn't until a millennia's time had past. The east and the west didn't split because of religion either. It was due to the size of rome. It wouldn't make sense to say they "broke off from Rome's pagan beliefs to make the Byzantine empire" when they didn't break off, and by the time they became the Byzantines rome was already Christian.
