Sailor for my journaling and letters. Pilots (Decimos and VPs, specifically) are my everyday pens. Those are my two favorite nib makers. Love platinum too though. Japanese nibs are just the best nibs in the fountain pen world.
Pilot nibs are friendlier than Sailor. Sailor nibs are excellent too of course, but too stiff for my taste. Platinum and Pilot nibs are a bit bouncy, so much friendlier to the user.
I only have one Platinum, a Preppy, and then I have four Pilots and I'm planning on getting two more, and I have four Sailors and I'm planning on maybe getting another eventually. I love Pilot and Sailor pens the best so far with Pilot being just above Sailor although I do love the typical "Sailor feedback". Pilot pens are just more easily accessible to me and are cheaper for me to obtain aside from the obvious being they have more nib options, more affordable entry level pens in both gold and steel and also are smoother writers (less feedback). That's probably the only reason I like them more than Sailor. Otherwise they'd be tied for me personally.
Pilot really is the pen king in my opinion. Their steel nibs write better than 90% of gold nibs, their rollerball and gel cartridges are smooth and wonderful to write with, and their pen designs are always so user friendly. The coolest part is the sheer variety in pen bodies too. Sure sailor pro gear has a lot of options, but they are all still the same shape. That being said, platinum does have some wonderful stuff too. The curidas is a 50 dollar pen that does everything the vanishing point. It all come down to preference though, sailor has probably the best quality control of any of the companies, while I have heard of the occasional person complaining that their pilot metropolitan is scratchy or that their gold nib platinum pen is scratchy, but I have never once heard a quality related complaint about sailor

I think they are different enough that most people will prefer one over the others. Me, I'm a Sailor Boi.
I love Sailor too. But i think i prefer Pilot.
Sailor has incredible nibs, I love their tuning. Pilot is more western.

I have curidas in fine nib. It's Ok in terms of grip and feedback but is consistent and reliable. Very underrated brand platinum & curidas
I bought Sailor 1911 Light Shining Blue 14k, scratchy and toothy. Catches on paper. My first Sailor and instant disappointment.

Which Pilot is the best?
There is no nib like a Sailor 21k. Pilots are usually overly smooth, but better than other brands except Sailor.

I’ve a few Pilots and Platinums (no Sailor).. Pilot for me ! Not a fan of ‘feedbacky’ character of Platinums..
