Hurrah! Just back from a two week trip to France and forgot to tell my house sitter to eat alll the veggies in the fridge. They actually don’t look that bad, but nearly rotten soup idea is going to kick them up to fabulous and edible 😂😂. Thank you for this!
I made the veggie soup, I used half a bag of frozen soup vegetables mix and some fresh onion and green pepper and some chickpeas and some kale. The cashew cream makes it so rich, we really liked it! and now I have a use for the tin of Old Bay Seasoning that Ive had for a while
Instant pots are awsome. Those that think it makes you lazy have WAY too much time on their hands. Unfortunately even being 68, still working, church, grandkids, and a social life, I need the crock pots and Instant pot. Thank you so much!! 😊
My husband puts Old Bay on EVERYTHING (to the point of being insulting at times), so I had to try this for HIM. (I'm not a fan of Old Bay). But wow -- this is literally the BEST vegetable soup I've ever made! It's actually like a clam chowder, but without the clams. I added a tin of chickpeas (drained), which made it more filling. My husband just loved it. It will be in my weekly rotation, for sure! Thanks for an "out of the ballpark" recipe!
Once I started grating carrots as soon as I get them home & toss them into the freezer, I eat way more of them. I'm not a big cooked carrots though I know they're so good for you. That's why, grating, freezing & then tossing into anything. Works great. Thanks for all of your videos & emails. 😄
I can see the Almost Rotten Veggie Soup becoming a very welcome staple in my house. So tired of throwing vegetables away! I added some aging spinach at the end and some summer squash at the beginning. The cashew trick at the end is very versatile, one I can use in other soups, and it makes this soup delicious, not like the run of the mill veg soups I've tried before. So thankful for this trick! I used 4.5 c. of broth with 1 c brown rice. It was thick, but we like it that way.

I am always amazed how in the US you turn something healthy into something healthy but hypercaloric (I'm from Europe btw), nothing wrong with it, but the huge amounts of sugar, cashews, maple syrup etc is something we would never use in Mediterranean cuisine😅

I thought that deal might be over as it is 6 days after you posted, but I went to the affiliate links, and got the almost $50 version for $20 something! Hoorah! veggie chopping is one thing that keeps me from making more of my food from scratch! Now I have less excuses, lol 😂
I made the red beans and they were delicious! You recommended 4 to 6 cups of broth, so I used 5, which turned out to be too much; they were a little too soupy, but that's a minor quibble.. Next time I'll use 4 cups max. I used the Better-Than_Bouillon mix, and it made the beans a little salty. Next time I'll use the reduced sodium version. This recipe made a s..tload, so of course I froze some portions. Thanks for a great, easy IP recipe.

Do you know what I did wrong when cooking my steel cut oats & soymilk in my instant pot as it stuck to the bottom and now has some brown stain I can't get off?
Oh man, I know it is supposed to be funny, but almost rotten? My mom used to make soup with leftovers like that and she called it clean the refrigerator soup, and I didn't like that either, because we had one of those old non self cleaning fridges- so it involved melting ice that collected all over the freezer unit, and washing the whole thing down with hot water that could look pretty grimy afterwards, and I would picture that water in my soup... I guess I am just kind of weird about calling my food things I wouldn't want to eat.
I live in the US but I'm from abroad and that was my first thought after moving here... I kept hearing "dump and go" and the ever-appealing sounding "dump cake" 😂... Very unfortunate names!

Nice recipes … but I don’t think leaving soy milk and oats at room temperature overnight is a good idea from a food safety perspective. It will be fine until one day your luck runs out.

Porridge takes 2 minutes in a microwave.
I use my slow cooker for stone soup.
A microwave won't cook steel cut oats in 2 minutes, steel cut oats really need long slow cooking , they aren't the same as rolled oats.
Do you know what I did wrong when cooking my steel cut oats & soymilk in my instant pot as it stuck to the bottom and now has some brown stain I can't get off?

I didn't have any, but I found a recipe by the Pioneer Woman online and made my own.
Oh man, I know it is supposed to be funny, but almost rotten?
