Hi! I'm Italian! I love this recipe and a I'm gonna try to do it. Usually we do not cook with coriander or turmeric, but I'm sure they are perfect with potatoes. Thank you for mentioning extra virgin olive oil ( one of our excellences) and for not cutting basil with a knife as the rest of the world do (wanna kill them!)! This is very very Italian! May I say something? We use to add basil and oregano only after cooking. Especially basil, that change taste too much while cooking. Love your recipe. Bravo! Bravissimo!

Thanks for sharing the history of Aloo. 👌👌 In reality, “Aaloo” is a “kand” not a “Subzi” , because sabzi comes from “Subz” means green in color. All greens and colorfull veggies growing above the ground are true veggies. No doubt Aloo is overused in recipes and liked by all. The downside is too much fried potato leads to health-related issues. So the moral story is mix a lot of greens with aloo and keep “aloo chhilka.”

I am the person who don't know how to cook other than maggi, preparing coffee and small small dish items. But recently for the first time I tried cooking and the first dish was ur dish that is ITALIAN CHATPATA ALOO. What I did was instead of using baby potato I diced the potatoes to cubes and guess what I am the person who don't know to cook but surprisly the fish came out super and fantastic and tasty. In Gujarat, kathiyad region (Rajkot, junagadh..etc places) Yaha pe hum log Chhilke wale Aaloo ki sabji banate he....with lots of garlic and red chilli powder..(super spicy)...with masala buttermilk. ..with Bajra Ka rotla.. And this is our kathiyad's special dish....

You can use parsley instead of coriander and/or you can go to an Indian store around. You’ll definitely get it
