I did a similar bootleg and replaced the roms with the redux version. This is a redo of the bootleg that comes as close as possible to the original version.
Check all Capacitors near the video output, also check all capacitors in the oscillator "CRYSTAL" circuit, if any are more than 15% out of specs just replace them.. APU 👁👍
In this case it's the gbs8200 rgb converter I use....it's great for certain things...others....not so much...apparently there is custom firmware for it...but I haven't looked into it enough
INSPECTAH TECH, What does the Security Chip, it "holds" what in place that extra code of doing what to the graphics, colors and spirits? Most arcade games don't have a Security Chips which I'm not sure why this Bubble Bobble has a Security Chip for what reasons?

On a real taito pcb IC17 is a custom MCU chip call PS4 which handles some custom R&G and a few other things
