Knowledge is always power and im just as interested in who brought posto to us as well as why wait for the mustard seed to pop and why the particular sequence of adding ingredients. Takes me back to lab days and history too and it deepens respect and appreciation for that particular cuisine. Im now an informed ingestor not a mindless muncher 😊. I heard a theory once that biryani was first developed in south india (Probably somewhere near Hyderabad) when some soldiers were fighting a battle. They didn't want to overcomplicate their culinary choices and hence mixed rice, meat and potatoes in one dish and named it biryani.
