Being from india i can say that most of the indian dishes consumed globally comes from north india. You should explore from south, mid india, northeast. They have some pretty amazing food. Also, the way indian can transform the vegetables into delicious food is just amazing. We can make 1 vegetable in atleast 10 different ways and they all would taste different

No of course double dipping is not ok especially if it is a communal dip. We have the concept of jootha. My grandmother didn't even taste the food she cooked. It was considered sacrilegious almost like you are feeding someone something from your mouth. Times have changed and many people do taste the food they are cooking. My grandmother never ate at hotels cos they tasted food while cooking. She ate at temples where even now food is cooked without it being tasted.

You were right. The chicken in Indian mains is juicy and tender because it's seared fast in high heat to lock in the juices and then slow-cooked with the sauce later. We do the same with mutton (we usually mean 'Chevon' by mutton, while lamb is also available - but lamb is a cheaper meat here).
One advice for the dahi poori or paani poori, DO NOT WAIT too long to eat it as soggy ones do not taste as good as the crunchy ones. So you need to eat them as soon as they come to the table. The textures and flavors are on a different level.
Guys whenever you eat panipuri(called golgappa here) no matter what the filling is, don’t wait or it will get soggy just like how it melted in your case. So next time whenever you try it next time, eat it asap to enjoy it to the fullest!

Somewhere it's panipuri and somewhere it's golgappa! And it's variants are there..
