    Dear Chris: recipes should NOT be forgotten. You are doing a very great service by presenting recipes that people don't know about or have never heard of. I make pork and sauerkraut on New Year's Day following my German family traditions and recipes. My husband loves store-bought head cheese. I grew up on Habbersett's scrapple made in Philadelphia or from the Amish farmers.
    Pickled pigs feet are seen more often than your recipe for cooked ones. I assume the hog ears add the gelatin. What an interesting video!!! Pork is pork. I'm sure you've tried to entice your relatives to take part in these recipes presented today.
    With chit'lins and other old-timey foods, you've not only educated youngsters about their heritage but also us whites who appreciate learning about foods from long ago. We ate leavings, too. Scrapple is one, and I loved it when we ate it at home. Various kinds of sausages, kishki (blood sausage, made to this day in white ethnic neighborhoods), and so on.
    People today may turn up their noses at recipes from you and other sites. Heritage recipes and foods absolutely need to be preserved, no matter the ethnicity. I am so happy to have found your channel. Yes, I have made some of your recipes. BBQ sauce is awaiting a big container I got especially for it!

    Your head cheese / sousse looks so good. My mother used to make hog head cheese back in the old country in Europe, she would spice it up with paprika, cayenne pepper and lots of garlic. We call it sulze in German. I am the only one of my brothers or sisters who would eat it, they didn't know what they were missing, mmmm, mmmm. I love your cooking channel!

    I haven't eaten a pig foot since I was a child. It was so helpful to see how to cook them for my sons. My youngest said he wanted to try them he is waiting around looking at the pot! Watching this reminds me of my grandmother, who cooked pig feet and made souse too. Thank you so much, Ms. Chris.

    Hi Ms. Chris,
    I, finally got the nerve's to try to make my own hog-head cheese. I must say it came out perfect. It gelled really well a d was seasoned to perfection. I added jalapeños peppers instead of crush red peppers I like the flavor, smell & spice it gave the cheese. Its not "too" hot either. Thanks a million for your recipe. Never could have done it without your skillful hands guiding every step of the process.

    I use pig tongue and heart in my souse.

    That is some good looking souse. Very similar to what my grandmother used to make, and YES with the saltines! I like it with some collards or turnip greens, and cornbread.

    It's a shame that no one else will enjoy sharing your pig food here.
    Notice everyone from all over have some past experience. I grew up in the deep South and loved this food. I lived, traced and worked all over the USA as well as Europe and Korea. Everyone has roots or some history from the Southern USA.

    I feel you Sis, I feel you! You are country down and so am I. Not too many people know how to fix hog head cheese. My Grandmother on my Mother's side fixed it "FOR YA," and she took it with her to the grave. Her second to the youngest Daughter, my Aunt Iola, knows how to make it; and since watching you, I now know how to make it. I don't have to buy a hog's head if I don't want to. I was raised in the country in Jasper, Florida and I know what's good; and Sister, you made my day and, YOU KNOW WHAT'S GOOD!!! Forget them in the house that don't eat it and don't know the goodness and mercy of head cheese (hog). Love ya and God bless you and your family.

    When we have a roasted pig at Christmas my father-in-law & I are the only ones who eat the brain & the ears. I have no shame! Sorry, the brain is like pate! I discovered you for lobster tails, I can't stop watching!

    Hello Ms. Chris, I would like to thank you from the bottom of my heart for this video. It is very similar to how my late Dad made his souse. And like a dummy, I didn't take the time to learn from him. I didn't know what the world was coming to when you couldn't find a decent souse recipe online, that is until I found yours.     That brought back memories! My maternal Grandmother used to make hog head cheese.She would use the whole head when she could find it or just parts as you made it.I never tasted it but those in the family who liked it raved over hers.She too liked vinegar and crushed red pepper flakes in hers.

    I just use pig ears and pig snouts. boil with seasonings til tender, put it in a blender, chill over night..Done. :)

    Chris I loves your channel my grandmother my father's mom made souse and head 🧀 cheese for Christmas she always cooked a feast but more on holidays.She had roast beef 🦃 🐄 Turkey Chitterlings head 🧀 cheese and souse green beans 🌽 corn 🥔 potato salad cranberry sauce two pans of cornbread dressings 🥗 salad jello 🍰 cakes and 🥧 pies.Thanks for showing Ms.Chris

    Thank you so much for that recipe, my father would spend all night making hog head cheese, but I never got the recipe, one regular pan and a spicy pan. I ate until it was all gone. Lol

    My mom would give us hog cheese and liverwurst with crackers. It’s an acquired taste that I eventually grew to appreciate 😊 I didn’t know that the process was quite feasible for me to make it myself. Thanks

    The Russian people make this. My mother used to make it a couple of times a year, Easter and Christmas. It was eaten with home made mustard or horseradish and black bread. She only cooked it with garlic, bay leaves, pepper corns, salt and carrots. I could never it the stuff myself but my brothers and sisters loved this stuff. Thank you for sharing.

    I am from Cleveland Ohio but all my family is from the south. My grandparents on both sides, unbeknownst to me. used to love and cook souse meat regularly. I had never had it. Never knew anything of it until my aunt was telling me things her father used to make that she wouldn’t touch. I had to have it. This recipe brought my soul what was missing. A lot of things just can’t be taken out the blood. Thank you for this ❤️

    Hi Ms Chis. When I saw your recipe I went right out and bought the ingredients that day. Your souse reminds me of when I was a kid and when to a uncles house and have some. I never knew how to make it and cannot find it in nearby stores. I have to get store bought souse from only one store that I know of. Now I can make my own. Thank you for this wonderful video.

    I made some about two yrs ago and it was pretty good. Just to add to what Chris did, I actually found a small pig's head and used it. Also, I used vinegar from a jar of pickled okra and sausage. I also made mine a little more spicy. Great stuff.

    This is a dish my mother and uncle loved she would make it for him every Christmas he would always tell her if she could make it with little more red pepper flakes he would be happy. She had this look he knew what was coming next year make it yourself.If she said that she was not making that dish for you any more.TFS. Happy New Year!!

    thank you so much Chris. Since the pandemic I have tried several of your recipes. I have been watching several of the soul food channels, I cannot find a recipe for sweet bread. I am talking about the one that looks like and taste like an unfrosted cake. people around me think I am crazy. I am the only one from my generation still alive.     The seasonings sound yummy. Thank you for NOT using that popular seasoning ,(CS) that contains MSG (monosodium glutamate).
    I found it to conflict with my heart meds and seriously elevated my blood pressure. Keep up the good work.

    Hi Chris, my parents used to make this, and moulds it into a form also. It's quite common for Italians to do it, and I've tried it, it's actually delicious with some hot bread drizzled with olive oil.

    Hey Chris. I'm sorry I missed your birthday :-(. But happy belated birthday to you. Thank you sooooo much for this vid by the way bcz when we buy pork, we buy a half to a whole hog and have it processed. Under these circumstances, we want to utilize as much of the hog as possible with little or nothing being thrown out or going to waste. This is a beautiful recipe and a VERY helpful one. My grandmother used to make this, but when you're young and dumb you don't take things seriously or pay attention. Now I wish I had paid attention as you clearly and wisely did. You have given me a second chance to learn this and for this I thank you so much. Have a happy and blessed New Year :-).

I love hog souse & I'm from the country so I used to watch my mom, dad, & grandparents make it homemade when I was little girl.     I remember as a boy. You can go the corner grocery store. And buy a 10 or 12 slices of souse for 35 or 40 cents. I think head cheese you can buy for 12 or 15 for 50 cents. Oscar Mayer used to make head cheese. I have to admit. Homemade souse and head cheese are the best. My favorites are mild and barbecue, sage, hot souse I don't like. Head cheese I like with unsalted crackers better. Some people eat souse with beer or whiskey. Souse and head cheese are good for snacks. When watching a ball game on TV or watching a favorite movie.

    Thanks for this video my Granny also made hog head cheese once a year at New Years. She used the whole hog head I'm so glad I now have another way to make it. I would have never been able to use the head, I was always too scared too look at in the store.....LOL. I don't eat a lot of pork anymore however I'm going to try this.

    I have to try it with pig feet. I use pig ears; pig snout. And fresh hocks.

    I usually use pigtails with the ears and feet. Then I use hot sauce for more spice and heat. Whether its cooked souse or sliced souse; its delicious. Thank u for ur recipe.😳🐷🐣
