    INGREDIENTS :
    2 cups soya chunks (Meal Maker)
    3-4 tbsp oil
    1 tbsp chopped garlic
    1 tbsp cumin
    2 chopped onions
    3 cloves, cinnamon stick & 1-2 bay leaves
    2 diced tomatoes
    2 tbsp chili powder
    ¼ tsp turmeric
    1 tbsp coriander powder
    ½ tsp cumin powder
    1 tbsp ginger garlic paste
    ½ tsp pepper powder
    1 small tomato cut into cubes
    1 capsicum in cubes
    few fresh curry leaves
    1 tbsp lime juice
    1 tbsp chopped coriander
    salt to taste
    METHOD :
    Firstly, add 2 cups of soya chunks in boiling water along with some salt and cook 6-7 minutes on medium high heat (stirring in between). Once cooked drain and pour cold water on top and rinse thoroughly and keep aside to cool. Once cooled squeeze to remove absorbed water and keep aside.
    Heat oil in a cooking vessel, add cumin seeds and saute until aromatic. Further add finely chopped garlic, onion and continue to saute until translucent. Add whole spices cloves, bay leaf, cinnamon and finely chopped tomatoes. Saute till the tomatoes turn soft and mushy.
    Add chili powder, coriander powder, turmeric, cumin powder and pepper powder. Saute well for 1 minute on low heat. Now add squeezed soya and required salt. Give a good mix making sure the spices are combined well with soya chunks.
    Add half cup water and cover and simmer for 4-5 minutes so that soya absorbs all masala. Now add tomato, capsicum cubes, fresh curry leaves, 1 tbsp lime juice (if necessary) and give a good mix. Cover and simmer for 1 minute and done!
    Finally, garnish with coriander leaves and serve hot with chapati / any roti, or as side dish.
