COMMUNITY KITCHEN - How to make “Soapberry Ice Cream”

    Soapberry Ice Cream
    INGREDIENTS:
    • ½ cup (125 ml) fresh Soapberries, washed
    • 1-3 Tbsp water
    • sugar to taste
    • vanilla extract to taste
    DIRECTIONS:
    1. Harvest the soapberries, wash with clean water and dry.
    2. In a saucepan, simmer the soapberries for 30 minutes on low heat.
    3. Remove the berries from heat and let cool.
    4. Transfer the berries into an oil-free mixing bowl and whip with a whisk, hand mixer, or electric mixer. Add water and continue to mix until the berries become foamy, similar to a meringue.
    5. Add sugar and vanilla extract to taste.
    6. Continue whipping until mixture is foamy to your satisfaction.
    7. Chill in freezer until ready to eat.
