Why do Japanese people eat raw fish every day without fear of parasite infection?

I remember reading Health Hazards of Sushi and I have never eaten it since! You can definitely catch parasites from it.

These parasitic worms are usually between the fish skin and flesh. So as you peel off the fish skin, the worms are exposed.

How do you know? I heard it can be in the muscle like anisakis
