I really appreciate what your family is doing. Good for you. People talk about wanting to save the world from pollution and overuse of resources but most do very little about it. It is our lifestyle that is the problem, cutting out the use of plastic bags or straws is a small drop in the ocean of problems we face. You are making the changes that really need to be made in order to make a real difference. I am coming up to the Show Low area in a couple of weeks to shoot a video near Clay Springs (great name).
It depends on several things, how open the clay body is and how dry the air is. Sometimes 20 or 30 minutes and sometimes half a day. The whole process is very dependent on the dryness of the piece being formed.

how do you roll the coils so that they don't becomes square? (sorry if this is a very beginners question) :)
This is a hard thing to teach. Practice rolling coils using firm, even pressure and you will improve.
