Pack your own & supplement with the cafe car. The on board food isn’t terrible but it’s mainly frozen that they heat up or pre-packaged. For this trip I made a veggie wrap & packed some other veggies & treats to snack on & then got drinks from the cafe cart.

No, they are for purchase. Different lines have different prices, but they are all on the amtrak website: www.amtrak.com/cafe-car
Is it coach seat or business?
I traveled in Coach. Next time I would probably upgrade to Business
