I like Hyderabadi style recipes when you put everything in at once and just keep cooking it. I'll try this. I assume with mutton is meant a lamb or possibly a young goat meat. I can't see a "real" mutton to cook in an hour.

I used Guntur dried Red chillies. But in case that is not available you can use Byadgi ones. But the heat for Byadgi will be more than Guntur chillies so maybe you need to reduce the number of chillies 😊

You can reduce the whole red chillies and increase the Kashmiri Chilli powder to tone down the heat without affecting the colour. 😊
