- Stir Fry Egg Wrap | Thai Spanish Omelette Great For The KIDS
A great dish for the kids, and a great dish to cook with them, simple and quick, packed full of veggies for those pesky kids that are fussy. Feel free to jazz it up using chilli, lemongrass and basil for the adults. This is a great way to use up ingredients in the fridge.
Here's the recipe:
🟢 for the initial stirfry
2 Cloves of Garlic
Quarter white onion chopped
Coriander root or coriander leaves and stems
🟢 for the main stir fry
30g Sweetcorn
30g White mushrooms chopped
30g spring onion chopped
30g coriander finely chopped
30g Tomatoes chopped
30g carrot chopped
30g Yellow peppers chopped
30g Red peppers chopped
30g Green peppers chopped
100g Minced chicken
Half Tbsp Sugar, we put a tiny bit more
2 Tbsp Oyster sauce
1.5 Tbsp Light soy sauce, plus a dash for the eggs
3 Eggs
Put some sriracha chilli sauce on top or in a little bowl
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.
