    What's cool with this style soup is you can easily add however much protein you like.
    Want the soup thicker? Add unflavored whey with the stock. Want the soup creamier/more umami? Add natural or smoked tofu and puree, or make "tofu croutons" as topping. Want frigging cheese? Put the soup back in the hot oven and toss high protein cheese right on top for fantastic gooey topping.

      One of my favorite ways to add protein to blended soups is ground lentils! But I love the idea of adding tofu, will have to try it out

      @@igawieczorek4566 Gram (chickpea) flour is also a decent way. Very high in protein and you can find it in basically any indian/pakistani supermarket.

      Note that Indian supermarkets often sell gram flour as "besan"; this is the Indian name for the same thing

    I love how cooking is such an integral part to how you show your fiancé love. From your proposal in your cookbook, to little things like this to keep him healthy. Very much like when your parents cut you up some fruit when you’re a kid.

    Your channel has totally reframed my view on sort of what my goals are when I start cooking. Like I can just make roasted carrots and just eat those by themselves, I feel like we’re so conditioned to see meal time as a sort of plate of food groups instead of zooming out to your whole day’s worth of intake.

    Soups are by far one of the most underrated dining experiences, in my opinion!

    I have a similar recipe with butternut squash, leeks, pears, Roma tomatoes, and garlic. Salt pepper and thyme are the seasonings plus the char of roasting and man is it gooooooood

    I love making sheetpan soup. I often put some heavy cream as well! It’s also great food to make if you have street side vegetable/fruit stands in your neighborhood bc often the stuff they sell is cheap bc it’s at peak ripeness.

    Wow! Can’t wait to try this soup 🤤. I have a question; can this same concept be used with pumpkin or other types of squash (acorn squash…). Only thing is that since there are different kinds of pumpkins, which one would you recommend?     This would probably make a good pasta sauce! I try to avoid pasta because I could easily make it for dinner every night of the week, but I also don't care for soup very much. This would be much healthier than spaghetti!

    I always do this with those $5 packs of chopped vegetables that sat in the fridge for too long and never got around to using them for anything. Only I would sauté and season in a pan, put them in a magic bullet w/ chicken broth or premade butter squash soup.

    Roasting thick cut onions, blending, then reducing that would make the BEST soup! Haven't tried it yet because ain't nobody got time for that lol

      For that whole sheet pan I might have used 1/2 a tablespoon to start. You can always put it back into a saucepan after you’ve finished blending it and add more if you think it needs more.

    I know it’s an extra step and dish to clean but I like putting it simmered like less than five minutes with the stock and or some coconut cream or heavy cream or even half half for a creamy light soup…….

    I did one with parsnips , tons of ginger , carrot , and sweet potato and onion, then you blitz with a tiny bit of coconut milk and some homemade veggie stock. It was gingery and spicy a little and I did some dried and fresh chopped herbs on top it was - unreal
