What's cool with this style soup is you can easily add however much protein you like. Want the soup thicker? Add unflavored whey with the stock. Want the soup creamier/more umami? Add natural or smoked tofu and puree, or make "tofu croutons" as topping. Want frigging cheese? Put the soup back in the hot oven and toss high protein cheese right on top for fantastic gooey topping.

I did one with parsnips , tons of ginger , carrot , and sweet potato and onion, then you blitz with a tiny bit of coconut milk and some homemade veggie stock. It was gingery and spicy a little and I did some dried and fresh chopped herbs on top it was - unreal

One of my favorite ways to add protein to blended soups is ground lentils! But I love the idea of adding tofu, will have to try it out
@@igawieczorek4566 Gram (chickpea) flour is also a decent way. Very high in protein and you can find it in basically any indian/pakistani supermarket.

Note that Indian supermarkets often sell gram flour as "besan"; this is the Indian name for the same thing
