    Dear Mary, I tried this recipe and it turned out so nicely! I had never made marmalade before. I am a 31 year old woman, and I have been learning to can and preserve over the past year, as part of preparing for starting a family in these uncertain times. I learned so much about how to activate natural pectin from testing this recipe - my marmalade set up beautifully! I have never been able to get a jelly or jam to set well before. Thank you.     I'd love to share my recipe for star fruit jam! They're not yet in season not far off, which I can't wait since I'm completely out!!     I love making orange marmalade, and I make mine very much the same as you do.
    A tip is to place your cutting board inside a sheet pan to catch the juice.

    It is the beginning of citrus season here in Texas as you well know. I wanted to just can some of the fruit but I saw a video listed on marmalade. So I jumped over here to your channel to see how to do the job well. You are so meticulous and it gives me confidence the time and effort will pay off following your instructions.
    But here's my question: Once you've completed the cooking and it is 'complete and just right,' doesn't the water bath canning cook it more and make it gummy and gooey? Thanks for your patience and help. Jesus bless.

      Hi Sandra, Please forgive the delay. This is an older video so I don’t always see the comments right away. The water bath canning process is relatively short. It’s not like pressure canning. And water bath canning is what is recommended by the National Center for Home Food Preservation to make the marmalade shelf stable so the marmalade should be fine. But you can always just refrigerate it if you are worried. Just follow the recipe. Good luck! Love, Mary❤️🤗❤️

    Your attention to detail is amazing. For example I never heard the info about the lids not being in the water long. These kind of details can mean the difference between success and failure or so-so success. I have always wanted to make marmalade and feel that I can do it. Thank you Mary.

I was worried my videos would be too long but then I thought of them more as a class than just some short 5 minute video. They are so much fun for me to film because I feel happy that I can help others to learn. Yes - you can so make marmalade! And I wanted to show how to do it without pectin. It can be challenging but if you can do that, you can do anything!! LOL!! But feel free to use pectin if it makes it shorter for you. Either way, please let me know if you have any questions.     I use a zester that I found at my local grocery store. The zest comes away in very thin narrow strips, perfect for marmalade. Made orange marmalade and it was wonderful!!! I store my rings on stainless standing paper towel holders and have one for regular rings and one for wide mouth . Works great!

    You would be the ideal for my pick your switch Grandmother. Your peel of that Rind was so thin and long! I'd have been cheering myself. Winning! Yea You! Great tips and tutorial on this. Grandmother was not gonna spend a cent on anything she could do without expending money on. She was frugal. So frugal when she died she had a ball of shipping twine the size of a basketball. She saved the paper you wrapped a package in also and just turned it inside out to reuse. I'm thankful you are teaching me the frugal way. I still fear that woman and she's been dead 35 years.     New subscriber here. Whoohoo, you're almost to 1000! I lived in Austin many years ago, but still remember the delicious jellies and jams made by New Canaan Farms in Dripping Springs. My favorite was their Citrus Marmalade. I've tried to duplicate it unsuccessfully, but now I know how to do it right. Thank you!

    I don't keep the rings on my canned food so like you I've ended up with a ton of rings I took a whole bag of them to the school for crafts for them I think they're going to use them as frames for little pictures to hang on the tree for their parents I'm not sure but it's certainly a way that was appreciated and I didn't have to try to find a place to put more of the dang things

    Hi Mary. I like how you made the marmalade in the traditional way. Do you think monk fruit sweetener would be a good option here? We have a huge orange tree in our yard that yield a lot of bright vibrant beautiful oranges. The color and the citrusy flavor that you will not find in the grocery store. It is a perfect time to make marmalade.

    I used a glass pie pan because the fruit juice was making a mess. That worked really well, then I could periodically dump that in the bowl, free of seeds.

    Wonderful video. I will be watching them all. :) I do have a question. What happens if you don't bring them out of the hot water straight up? I pulled my jars out sideways because I have a stove fan just above and could not bring them out straight up. I also did not know to do that.

      PS years ago I read the pith is high in vitamin P ( have no idea if true) but my mother had problem if hands barely knocked would bleed and the P is supposed to remedy that as helps remedy surface spider veins I seem to recall...it worked whatever factor it may have been.

    Such an informative video! Thank you so much Mary!!! I have a tree full of oranges I am trying to find a variety of things to do with them before it's too late to pull them. I will be making a candied orange peel video soon, learned the vinegar from you, ...now making citrus JUN & Citrus water (I need kefir...) and have been wanting to do jams, but wasn't sure if it needed to be pressure canned. I see now the difference in water bath vs. Pressure canning. Can't wait to get this pot!!❤Shanna

    I find soaking the pythed fruit in plain water makes it very easily scraped with a dull knife. Just my best method as I hate boiling it.

    Be sure to read label on box with lids -- making a new/different type of seal now that will disintegrate even if only briefly dipped in boiled hot water -- so if it says on label not to then don't. I found out the hard way.
    As long canning process is 10 minutes or longer (more at altitudes; don't forget to make adjustment) lids and jars get sterilized right along with the food so not necessary to sterilize -- however, do need to preheat jars before adding hot foods to avoid temperature stressing the glass so ready to use when water comes to boil -- but doesn't hurt anything to sterilize if prefer to do so (I do it anyway myself).

    I add Sure Jell to every jam or jelly that I make. I have recooked all the jelly that I care to because it would not set.

    I don’t boil the water in the small boiler containing the lids and bands, but I have never had a problem with putting the lids into the boiler with the bands. One problem is getting two lids stuck together and inadvertently putting to lids on a jar. Now, I keep a mental count of jars, lids and bands. If 8 went in, eight better come out. If I end up short one lid I better find it, because it is probably under a band on one of the jars.

    220 degrees is where I generally take most jams but some require 225 degrees. Apple is the worst, but I have found the if you add the Sure Jell to the jelly when it is cold and bring it to a rolling boil before you add the sugar they set perfectly. Having the right amount of juice to sugar is also a plus. In other words, have a good recipe and do not change it. If you want to make more jam or jelly, just do it in two batches instead of doubling it into one batch. I like to make a flat of jam or jelly but I usually do it in two batches instead of one large batch. You can get away with it if you are making jams but never jelly. The real reason you put the band on fingertip tight is because by the time you get the band on the band is so hot you cannot continue to tighten it.I can put a flat of half pint jars in my canner but only half a flat of pint jars.

    I put my hot water canner on the stove with the jars in it before I start working on the product. I put the lids and bands in a small boiler with enough water to cover them and turn them on low. I turn the eye on Hi under the hot water canner. I will turn it down when the water comes to a boil. I try to keep the water in the hot water canner about 180-200 degrees, as checked with my infrared heat gun. I keep the canner hot because after the jam or jelly is put in the jars the canner will be used to process them. I lift hot bars out of the canner with my canning tongs. Usually, I throw any utensil I will be using, ladle, spoon, etc. into the hot water canner with the jars to disinfect them. Canning is easy but you have to be deliberate and consistent to produce a good product that will stay good for a long time. I ate strawberry jam that I canned in May 2013 and it was just as good as it was in 2013.
