I did exactly what you showed but the "edit" option doesn't appear... could you please help me? Sometimes it asks if I want to convert it to blocks, I researched about it and understood it should be done but even though it doesn't work...
If it asks to convert to blocks then you are in edit. I recommend converting to blocks. To get edit to appear, hover mouse over the page up and down a bit. The edit comes and goes based on where the mouse is

Wordpress.com is free if you choose a free plan. When you build your site like in the video it will be live online. Just type the website address and it will be there. The site in the video is reidbookmanauthor.wordpress.com/ You can see it live there. No cost at all.

Edit: I just noticed that I have the 'rol' of a writer' instead of admin. I have no idea why. I followed the exact first steps that you made.
I've not heard of that problem before but I can suggest if you go to the menu under Manage, then People you should see all the users. You may see a user as admin and it must be you. Then see what email was used for the admin account and try to log in under that email. If you still have problems, just look for the ? and then the Contact us link. Just send a message that your account was created with user level of writer and you would like it switched to admin. They will probably let you know how to do it. Thanks.
