  • The cake has several layers, and the first of them is a chocolate sponge cake. Between the layers of sponge cake are rolls made of thin sheets of dough, rolled up with a fragrant poppy seed filling. To balance the rich taste of chocolate and poppy seeds, juicy cherries are added. Their sweet and sour taste and bright color not only decorate the cake, but also add lightness and freshness. A delicate sour cream soufflé completes the cake. This is a light, creamy soufflé with a hint of sour milk flavor that melts smoothly in your mouth. Its soft texture and pleasant creamy consistency create a perfect contrast with the denser layers of sponge cake and rolls.
    To prepare you will need:
    Room temperature products
    Shape: bottom 21 by 21 cm, top 24 by 24 cm
    🍰 Chocolate sponge cake:
    250 g sifted flour
    50 g peanuts (toast and grind in a blender)
    50 g cocoa
    5 eggs
    70 g oil
    250 g sugar
    250 ml milk
    10 g baking powder
    a pinch of salt
    🌡⌛ Bake at 180 °C for 40 min.

    🍰 Roll dough:
    150 g sour milk cheese (cottage cheese)
    370 g sifted flour
    50 g sugar
    50 g sour cream 18-20% fat
    50 g oil
    1 egg
    0.5 teaspoon baking soda
    🍰 Poppy seed filling:
    150 g poppy seeds
    150 ml water
    55 g sugar
    1 teaspoon starch
    🍰 Additionally:
    400 g frozen cherries
    defrost and let the liquid drain

    🍰 Sour cream souffle:
    500 g sour cream 20% fat
    200 g plain yogurt
    150 g sugar
    1 tsp vanilla sugar
    25 g gelatin
    100 ml cold water
