My wheel is set up at 900 as on some games like Assetto Corsa they have cars that can go that far, and every sim out there automatically limit the range of steering by car, so back to my GTO, when I reach the car's limit, my wheel automatically resists turning further. I'd recommend you to get a too large range of steering to be sure that you will be able to always use all of the car's turning. Because even if most of the time you don't need to turn that much, on very slow and tight corners like Wehrseifen you will pretty much turn all the way. As long as the car's wheel turns as much as yours the range doesn't matter as it won't change anything on your inputs.

That way when you're facing the wrong way, you get down into 1st, move by a few mph, then after disabling TC, clutch down, throttle floored and wheel turned one side or the other, then release the clutch and when the car starts to spin let go of the throttle. Voilà, a magnificent U-turn.
