Pork Steaks | Old Country Wrangler

  • 2 Pork Steaks seasoned with the following:
    Seasoned Salt
    Kosher Salt
    16 Mesh Black Pepper
    Yellow Mustard as a binder
    Started a fire on my Old Country Wrangler using Post Oak as fuel source. Once I had established a solid coal base, I began throwing splits on the smoker once every 45 minutes. The pit ran at a temperature of of 225 - 250 degrees throughout the entirety of the cook. After 4 total hours and once the seasoning was set onto the Pork Steaks, I began spritzing every 30 minutes. I also too this time to move the Pork Steaks around to promote even cooking. After 6 hours on the smoker, the Pork Steaks were removed and placed into foil packets with butter and my favorite BBQ sauce. These were placed back onto the smoker until they probed like butter (Temperature was around 205 degrees). They were placed out on my counter to let the temperature fall, they were then left in the wrap and placed into a warm oven until it was time to slice and serve.

    Okay video, but much room for improvement. First, when filming in your home make sure your smoke detector's battery is good (the change battery chirps were distracting). Second, tell the audience what seasonings you are using on your meat as you are seasoning it. Third, when wrapping your meat in aluminum foil do not have your mic so close as it makes it hard to hear you. Finally, lighting is key, you were showing your pork steaks, but they were in the dark.
