Jason, I must say you have this local cooking recipes real boss. Things like carapoolay, methee, tamarind...that's real boss ingredients. I know a lot of the newer generation doesn't have an idea what they are. But this is very commendable.
Them dumplings remind me of gnocchi. I love the breaking of traditional style of making the corn but it's not too far where people would think it crazy.
