  • Ssambap is easy to make yet looks fancy and healthy. The sweet, spicy, and salty ssamjang, combined with the chewy sesame oil-flavored rice and kale, create a perfect harmony!

    Ingredients
    200g or 7oz kale leaves
    2 cups cooked short grain rice
    sauce
    2 tablespoons gochujang
    1/2 tablespoon doenjang (Korean soybean paste)
    1/2 teaspoon brown sugar
    1/2 tablespoon sesame oil
    1/2 teaspoon toasted sesame seeds
    Instructions
    1. Cut off the stems of the kale leaves.
    2. In a medium-sized pot, bring water to a boil and add salt. Place the kale in the boiling water and cook for about 2 minutes. Then, immediately shock them in cold water, and squeeze out the excess water.
    3. In a medium-sized bowl, add cooked rice, salt, and sesame oil. Thoroughly mix the rice with the salt and sesame oil.
    4. Combine gochujang, soybean paste, brown sugar, toasted sesame seeds, and sesame oil in a small bowl. Mix until all the ingredients are well incorporated.
    5. Place the blanched kale leave on the board and spread. Make a small rice ball and add it on the leaves. Then wrap it tightly, making in an oval shape.
    6. Make a slit in the middle of the ssambap, about two-thirds deep. Press both sides to slightly open up the wrap. Then, add pre-made ssamjang on top of the rice
    7. Serve on the platter at room temperature.

    Wow... this looks so easy! Gimbap seems complex with so many ingredients! But a recipe with just a few ingredients isn't as intimidating. And I'm all for recipes that use Kale. I would never thought of using Kale as an outer wrap rather than seaweed. Thanks Jia! I want to try this recipe.😁

      The sauce is called ssamjang. I combined gochujang(Korean chili paste), doenjang(Korena soybean paste), and sesame oil.
