  • You need to try these delicious and impossibly crispy empanadas I had in Medellin, Colombia. El Machetico de Nico, or Empanadas de Nico, (they seem to both work, so I'm just going with it) is located in the El Poblado neighborhood which is relatively safe, so don't be afraid to roam around. There's lots of restaurants, cafes, and shops in the area, so you can definitely get lost here for a while.
    Lots of people down here had recommended it to me, as well as the Lonely Planet guide. I cannot emphasize how good these empanadas were, and also bigger than I had expected! A normal person probably wouldn’t need more than two, three would be good for someone with an above average appetite, and if you’re eating four then you might be The Rock.
    I saved my last one and ate it later as a snack. Even after hours in the fridge and a reheat in the microwave it was still super crispy! How do they do that? Can anyone explain this wizardry to me?
    Let me know if you’ve had these empanadas, and definitely try them if you haven’t the next time you’re in Medellin!

    Those looked so good! You could hear that crunch!! It was also cool to see a little tour of the neighborhood.

      Thanks, and it was soooo good! I still don't know how they get them so crispy! Likely, my arteries don't want to know, LOL! It's such a fun little neighborhood, I'll have to film a proper tour of it before I leave.
