    She is right, as a Gujarati when i visit outside Gujarat and drink tea, most of the time i feel like it has less sugar and i ask seller to put more and he replies "Are you Gujarati"

      as a Punjabi when I first went to Gujarat, it was super difficult to find something that doesn't have sugar in it and before ordering anything I would ask 'Does it contain sugar', eventually I got used to the sweetness of the cuisine. It is crazy how diverse India actually is

    I have said this before and i’ll say it again. We need more Nishi Munshi in your videos, especially the ones with content relating to indian culture. She relates to it really well.

    Nishi munshi is right. Her way of making tea is more common, atleast in Gujarat and Maharashtra. ☕

      We are punjabi and we also boil the water first..
      But as we drink in office.. that dip dip wali chai.. water and milk is already mixed and you just dip the tea bag.
      So i guess it doesn't actually make a difference, just the milk should be boiled properly otherwise it will leave its smell.

      Malayalees usually don’t add masala and so we are used to boiling milk and water together. But Kenny has mixed cultures and so he did it the wrong way. You are right, if you add masala you have to boil water first.

      even in Jammu (J&K, India) where I'm from.. we put the water first.. let it boil with leaves and cardamom etc spices and all then we add the milk. :)

      Assam
      Munnar (Kerala)

    Nishi Munshi is on point describing the trains and chai. Ever since my childhood I've loved that too while travelling. We literally woke up to that sound in the mornings in train. I don't know for how long she's lived in India. But she definitely has India in her heart.

      Ajay Purohit we dont really hav masala chai in kerala. Its a new concept for us in the south. Its good thou. Recently shops in kerala are also introducing this briyani chai. Which is like heaven😍😍😍i wonder which states chai it is ??

    I am a malayali like Kenny, I make chai almost the same way as Kenny did. A lil less milk and no ginger.. yea I sometimes do add a drop of vanilla extract or a minute amount of cardamom powder to it. It totally depends on mood..

    What?! My family boils milk and water separately...
    First we boil the milk and the water. Then put ginger in the water. Then let it boil .Then add tea powder. Let it boil. Add milk to it, let it boil. Then add sugar to it, let it boil. And it's done!

    I'm a Malayalee, we don't put milk first. We boil water and tea powder then later we add milk.
    Like Nishi told, it changes house to house.

    Nishi is right. If you put masala and ginger in tea, you should boil water alone first. But Kenny mixed two cultures together. Malayalees usually don’t put masala in chai and so we are used to boiling water and milk together. Must’ve learnt this from his mom. But, Because of his Bangalore/Mumbai life he added masala too. He didn’t know he had to boil masala with water first which makes it tastier.

    I am from Madhya Pradesh.. first boil the water, tea leaves.. after the distinct smell of cooked leaves put in the spices.. I put cardamom, cloves, ginger.. then boil some more.. then milk and sugar.. and make it rise at least 2 times.. or more till it smells nice.. btw milk is half the amount of water.

    I am a Bengali, we just boil the milk and water, turn off the gas , and AFTER that add tea leaves with closed lid. And we don't have a concept of masala in tea. We NEVER boil tea leaves or sugar (only add them after turning off the gas). So it differs from state to state, just as Nishi said.

    I boil milk first for 5 mins in low flame, then I add water and boil it on medium flame till it bowl and then I add tea leaves and ginger, tulsi (mint), black pepper powder, cardamom or tea masala, then I let it boils on low flame for some time then I add sugar and boil again for 1 min. That's how I make tea for myself.

    Chai in India is not just a beverage, its a whole science and an art. It changes from home-to-home and from season-to-season, forget about the style changing from state-to-state. We make black tea if someone has an upset stomach. If it is winter and someone has throat problem, we add ginger, cardamom, if it's a viral fever or infection, we also add tulsi (basil) and gavati chaha (lemongrass). Based on what health issue someone in family is facing, we add various ingredients from cinnamon to stevia leaves to pepper to lime and various other things. When I have overeaten at dinner and want to digest my food quickly so I can go to sleep on time, I make green tea by adding stevia leaves, badi saunf (fennel seeds), owa (bishop's week or carom), cinnamon, black pepper and cloves to it. Even the tea-making styles are different to achieve different results.

    from what i have observed....every single person has a different way to make chai....even within the same family...even with the same ingredients, every person's chai tastes different...I find that very fascinating!

    I am from Kerala..... my mom first boil the water with the tea leaves then add milk and boil it again and add sugar..but I make tea like Kenny do, mix the milk and water.. double boil it with tea leaves and sugar.... but we don't add ginger.... sometimes I add cardamom powder.

    Irrespective how many fancy coffee shops or huge specialised cafes crop up in India, the magic of that simple roadside chai stall will never die as its almost a part of indian psyche ,right from the college days to the work breaks ...I like coffee as well but my best memories are over a cup of chai and that's where I have had the best conversations ...

    I'm a malayalii too and that's how we make chai. But every state has their own way of making chai, speak different languages, different religions and yet we stay united cuz all Indians are our brothers and sisters. Woah! Can you even imagine living in such a diverse country, ha guess I don't have to imagine.

    Me being Indian I like my tea way different from others the way I make tea is I only boil water and add tea leaves in it thats all. I then add sugar into the cup about 3 tea spoons I then strain the tea int the cup and add my milk from top. I never boil my milk. also I use milk from the tetra pack another reason why i do not need to boil the milk. Once in a way I don't mind masala and ginger in my tea but when i make it there is no masala what so ever in my tea.

    In Bengal, where my father comes from, tea is sacred! Right from buying the tea- there are specialised tea shops where you can make your own blend. You could mix different proportions of Darjeeling, for flavour, with some Assam, for colour, and some tea granules for strength etc. etc. The tea shopkeeper and my father would have long discussions about different flavours and techniques.
    Our family technique is boiling the water separately and adding the tea just as it starts boiling. Tea leaves are never boiled but allowed to rest in the boiling hot water for a few minutes. Then the tea is strained and milk and sugar added according to taste. Nisha is right, every community in every state has their own tea ritual!
    Drinking tea without milk is “modern”! When I was young, only the poor would drink tea without milk because they couldn’t afford it. Now it’s becoming quite common.

    Agree! When you make chai, first you boil the water and then put minced ginger and then boil it for 1 minute and then add sugar and wait until it mixes and THEN the tea leaves and then the milk and then you boil it and then lessen the flame and then boil it again and then switch it off.
    And some people like more milky tea, and India is literally SO diverse that even as an Indian we get surprised. Something as simple as tea is even so unbelievably diverse!
