    what if you dont use baking powder/soda? and what is the purpose that it serves in this recipe?

    Ebok Debok , The baking powder makes the texture a little bit lighter and crispier. I have tried without, they turned okay too. Just a subtle difference. :)

      Thanks. Hope you enjoy making and eating them. I got my coasters & placemats many years in Scotland. I think the artwork is by a Scottish artist. :)

      I haven't tried, but I would say yes. It might be firmer though when you first take it out of the fridge. You might have to leave it in room temp for a bit before rolling.
