My sister had her wedding there. The amount of olive trees there is amazing. I specifically remember this tiny restaurant by the sea where I had spaghetti with clams. I recommend anyone visit there. Before you add the Clams back to the pasta, add one tablespoon of butter. It'll make it more silky and the sauce will stick to the pasta better. If you like it spicy, also, you can add some crushed red pepper at the same time as the butter.

I cook the pasta alle vongole almost the same as your VDO, it taste a lot better than many place in BKK. it seems like many place in Thailand didn't use very fresh clams. Grazie mille!

I make it the same way but I stretch the olive oil a little bit and the wine (usually I have to make a lot for a large group)... and I added red pepper flakes. YUM.

This not only looks great but I was also impressed with you placing the entire batch on your plate. Not sure what I would have paired it with, a great cool beer or a slightly sweet white wine. And definitely a good crusty bread too. I wonder if you could up your game doing spaghetti with prawns,clams and mussels. Oh and you might find this interesting. I have been thinking for awhile of making a fresh pasta ravioli with small crumbled pieces of smoked salmon added to the filling. I live in the USA in Washington state and the salmon are beginning to return to our rivers so I intend to finally try it this summer/ fall with fresh salmon. I'll let you know how it turns out. I need a good herb and Cheese filling to match the smoked salmon, hmmm. 😃🎣👍

There is a place in FL where they farm wonderful clams, Cedar Key. However, I do not see the clams in stores anymore. They must be having problems. I could really go for a homemade pasta with clams.

These clams have such pretty shells that it'd be a shame to not include them in the final dish 😇 If the clams were much bigger you can pull them out of their shells and give them a rough chop. Make sure you save all the juices though 👍
This is a mild sauce really. 😐 But do this and you’ll get a full flavor. The same to start with, but use sliced garlic instead and use the stems of the parsley. Then throw in the clams (vongole) and the wine . When they open remove them and filter the juice with a colander. In another pan put 4 TB of olive oil and maybe 2 heads of garlic minced and minced parsley, cook 1 minute or until starts frying add the vongole juice and 5 minutes boiled spaghetti 400 grams for 4 people or 100 grams dry spaghetti per head , again for 4 people should be 2 lbs of clams or 3 lbs if you want but not much more . I also add a pinch or two of red crushed pepper while I continue to cook the mix 3 or 4 more minutes until it’s creamy . Don’t forget to add maybe 1/2 cup of the spaghetti original water to the mix so it’s not too dry sauce . (this part is very important) If there is some left over put it in the fridge covered and heat and eat it next day. Even more embedded flavor. Now THiS is the recipe for red blooded people that I hope you are .
Don't eat clams now (June), eat them again (end of) augustus/september, because they are reproducing this time of a year. Atleast I the north sea. Love them though!
