The Green Borscht reminds me a lot of a soup that my Crimean Tatar grandmother used to cook for me when I was a little girl, during spring- and summertime. That Crimean Tatar soup is called Fide Şorbası (which means "Plant Soup"). The concept of it is a lot of chopped leafy greens, any kind of it. Usually, sorrel, nettles, romaine lettuce, ground elder, wild garlic or spinach, accompanied with herbs such as garlic, mint leaves and parsley leaves, are being used. It can be made with meat, fish or vegetarian. Usually an egg or two is beaten and dropped in the soup in the end, and the soup is served with one or two slices of lemon.
