it is called throwing, or oxidating, since it is one of the "basic" methods of making a cocktail it is a must have skill, and not that hard actually if you get used to it, i usually add some extra movements to make it look more fluid (i also move horizontaly when i poour it back to the tin filled with ice)

I would love him to reply to this comment to share his insights, but there are a few reasons for that. It chills it by "rolling" the cocktail between the shaker tins. Shaking a cocktail, especially with gin, can "bruise" the liquor and hurt some of the flavor notes at the top of the palate (herb, citrus, etc). Rolling it prevents that but still gets some of the aeration that you would get from shaking and leaves no ice chips. It also looks damn cool. Tolmach is an amazing bartender who clearly cares a lot for the profession.
