How To Make The Best Sheet Pan Nachos

- INGREDIENTS
Beef & Beans:
• 1.5 - 2 lb ground beef
• 1 packet taco seasoning
• 1 can refried beans
Homemade Queso:
• 2 tbsp butter
• 2 tbsp flour
• 1 ½ cups milk
• 1 tbsp taco seasoning
• Salt to taste
• 1 cup spicy cheddar cheese, shredded
• 1 cup white cheddar cheese, shredded
Assembly:
• 1 large bag tortilla chips
• Jar of pickled jalapeños
• 2 cups shredded cheese
Toppings:
• 1 red onion, finely diced
• 2 Serrano peppers, thinly sliced
• 2 tomatos, diced
• 2 avocados, diced
• Crema or sour cream
• Fresh cilantro, chopped
RECIPE
1. Brown the ground beef in a skillet over medium heat until fully cooked. Stir in taco seasoning and cook for 2-3 minutes until well coated.
2. Mix in the refried beans and stir until fully combined. Remove from heat.
3. Melt butter in a saucepan over medium heat. Whisk in flour and cook for about 1 minute.
4. Slowly whisk in milk, stirring constantly, until smooth.
5. Add taco seasoning and a pinch of salt, then stir in shredded cheeses until melted and creamy. Remove from heat.
6. Assemble the Nachos: Preheat oven to 375°F.
7. On a large sheet pan, layer half of the tortilla chips.
8. Evenly distribute half of the beef mixture over the chips, followed by pickled jalapeños and shredded cheese.
9. Add another layer of chips, then top with the remaining beef mixture, more jalapeños, shredded cheese, and drizzle with queso.
10. Place the sheet pan in the oven and bake for about 10 minutes, or until the cheese is melted and bubbly.
11. Remove from the oven and immediately top with red onion, Serrano, tomato, avocado, crema, and fresh cilantro.

this was my question. I know the heat is coming from the top because it's a broiler (for pizza, I think?) but even so??
