Since olive oil has a lower smoke point, when you heat olive oil to that point, all the beneficial compounds and healthy fats in the oil will start to degrade, and form potentially health-harming compounds and at that point it's just not safe to eat/use anymore. Also, olive oil has its own flavour and its not suitable for fried rice or any kind of asian dish really. Neutral oils are always better for asian foods.
