If you need to stick interfacing while you sew you could try washable fabric adhesive. Like spray baste. But I've also used a fabric glue stick. I'm almost positive it's just a regular glue stick. I would do a test tho on delicate fabric but I use it on cotton for quilts all the time!
The side seam puckering issue. I had that a lot in the first few I made. Because the circle skirts are always have some fabric on the bias, I've found that they will pucker unless you hang them after they're cut for a couple days so the fabric can relax. Then you can sew it. You will have to recut the hem after it's sewn though, as it will relax to different lengths around the skirt.
To fix the side gap, I think you need to make the front panel wider. It looks like it stops at the proper halfway point when it should extend a few inches more to cover the pocket seam.
You can wash garments with fusible interfacing. It just needs to be gentle cycle and cold water. And of course, don't put it in the dryer. Some are more 'washable' than others.
The hook and eye bra closure is genius. I've been thinking of making one of these but couldn't figure out what adjustable method would also be quick and easy and you've got it! Thank you! Love your projects so much!

Wow, your approach is so brilliant! If you use woven interfacing, then you can wash it.
