Banana Choc Chip Rock Cakes | One Pot Chef

  • This modern twist on the old fashioned Rock Cakes replaced traditional dried fruit with chocolate chips and dried banana chips. Crisp and golden outside, slightly cakey inside, and very easy to make - these tasty Rock Cakes are kind of like a combination of a cake and a cookie - give it a try today!
    Ingredients:
    125g of Unsalted Butter (at room temperature)
    1 Cup of Firmly Packed Brown Sugar
    2 Teaspoons of Vanilla Extract
    2 Eggs
    2 Cups of Plain All Purpose Flour
    1 Teaspoon of Baking Powder
    Pinch of Salt
    1 Cup of Chocolate Chips
    1 Cup of Dried Banana Chips (roughly chopped)
    Preparation Time: About 15 minutes
    Cooking Time: About 10 - 15 minutes

    Hi David! Love to see a rock cakes recipe. My grandmother had some very old cookbooks that had brought cake recipes or they also called them gem cakes if they had colorful fruit in them. Most Americans will say they never heard of a rock cake and if they had a grandmother they sure have it might not know the name but they know the cookie it's more of a cakey cookie with lumps. Thank you for a great recipe that I can make easily vegan. :-)

    Made these today with just choc chips and made them slightly larger. (Got 11 out of the recipe.) These are absolutely AMAZING!!! Best cookies (I'm in the U.S.) I've made in a very long time. Can't wait to experiment with different chips and fruits.

    When u said banana choc chip i thought it was fresh bananas i was pleasantly suprised when they were banana chips not alot of people like them where i live (but i absolutely love them, can eat 2 bags easy no problem) they looked amazing for sure ima make this next time i get brown sugar

      Sifting the flour removes any lumps and aerates it - which helps give the interior of the rock cakes their “cakey” consistency 👍

      Fresh, finely grated orange zest or replace the vanilla extract with orange extract/essence 👍

    thank you for sharing. I have two questions about the recipe: Could I use salted butter and also can I use sliced banana instead of crushed banana chips?

      Salted butter is fine. You can add mashed banana instead of banana chips, but keep in mind the rock cakes will be softer 👍
