Because Minimum type has a metal part inside that will sink into the bulb if left vertical (5 degrees angle needed) and the Maximum one is like a fever thermometer and if left upright will lose the MAX reading over time. Wet and dry bulb are normal type thermometer and are meant to stay vertical.

That includes trees that can pump out large amounts of water vapor while buildings tend to retain heat and radiate it when the air gets cooler.
