    I'm sorta new to fine dining (2 yrs now), and we serve from the left, clear from the right. Never back hand the guest, as this guy did to both guests. Hmmm, but appreciate the vid none-the-less.

    My Mother was in Service years ago, up untill her death in 98, she was requested for Silver Service as she could teach it & keep an eye on those trying to do it, as we know not many can do it properly, being left handed myseld makes it harder for me, nice video....

    I recently read that at the end of the meal, to indicate that you're finished, arrange your silverware together at the four o'clock position. This is not correct if the waiter is taking the plate away from the right side, because the silverware will be in the way of him/her collecting the plate. Surely, the silverware should be arranged at the eight o'clock position to move it out of the way of the waiter. In fact, I am now advised that it is better to place your cutlery at the seven o'clock position.

    nowadays, more servers are serving at da right side to avoid hitting the customer and its very effective u know..

    WHY did he serve the initial plate from the right if the correct way is from the left? This is the rule that my staff follow...serve from the left and "clear" from the right, unless it is impossible to do so. For example, if doing it correctly would be rudely interrupting guest's private conversations. I agree with everything else in the video though.

      He served a PLATE. Plates are served from the right. Then he did Silver Service (which is, putting the food on the guests plates) which you serve from the left. Clearing is done from the right. Originally, serving and clearing was both from the right. But since most of the waiters are right - handed, silver serving is awkward to do it from the right. Nowadays you way (everything served from the left) is too common that you can tell there is a paradigm shift.

      @@thanos7229 That is not correct fine dining silver service. The PLATE is served from the left with the left. No ifs, ands, or buts... Cleared from the right with the right...

      @@aaronjohnfortune gosh I'm so confused. I did a waitressing job à few days ago and was told serve from the left take away from the right. The plate was already ready with the food on it so this si confusing 🥴

      Because the plate already has the meat item on it. A plate with anything on is placed down to the right. The trimmings are silver served from the left. A whole or partially plated meal is always served from the right. There are exceptions but this is only when it might not be practical to serve from the right, for eg if the table is up against a wall

    There was 2 reasons why my waiter got a $100 tip ...#1 He knew both I And the another person were in a deal meeting over late lunch He did not get between us. He understood my fork And knife on the plate with cloth on top the meal was done No need to ask Aside from finger in the air with a round circle to the drinks " another round "
    This person also went out of the way to explain why the meal was better..."whipped potatoes with cream Not milk And French butter" Find things for the customer to show You are there for them They can make you And break you

    The server should use open handed service. He should stand between the guests, serve the lady with his left hand, and serve the gentleman with his right hand.

    Silver serving from the left is slightly daft and is now pretty much obselete. Serving from the right, 'hugging' the guests is now more widely adopted. Nice video however :)

    This feels out dated in comparison to what I am being taught in my diploma of hospitality course. We are told to serve and clear from the right. Being mostly right handed it allows us to hold items behind the guest and not have them in the guests face. As well as most of the time we serve at round tables, that set 10 (barely) there is not enough room to serve from the left like this. Even in industry we are always serving and clearing from the right.
    To me this seems unnecessary, it allows time for the food to cool quicker outside the kitchen and in a busy restaurant it would slow the service down. Personal opinion.

      AngelH91 there's different kinds of services for different occasions, this is the silver service which is used for buffet and is probably not the same you are being taught because is not standard. It's good to know them all even if they seem out dated to you.

      Plated food is served from the right. Silver service, where the waiter serves from a platter, is served from the left. Finished plates are removed from the right.
