Not going to lie, I'd love to see some udon goodness (especially made from scratch). When I first moved to Japan, I always wanted to eat ramen. My wife's cousin makes soba as a hobby and he's taught me some. That's a whole other level of noodle making. On the other hand, those soba cutting knives are probably the coolest knives on the planet...
Most Onoshiki type 1 will come with 2.2mm cutter such as the one you just got. 2.2 is great for udon or Jiro style noodles but otherwise, most people in Japan use the onoshiki roller for low hydration mentai(noodle belt) and just use a pasta cutter to cut into thinner noodles.
One that is very neat, too. It doesn't look like it would be that difficult to have a machinist cut some dies for your ramen size, three. I can't wait to see this in action.
The only difference with udon noodles and ramen noodles are the thickness in cuts and ingredients. Ramen has that kansui that i can't find anywhere, 😗 basically just yellow coloring. But it's the same same salt, water, flour.
kansui doesn't really change the color of ramen noodles, it's usually stuff like riboflavin that does you can make kansui simply with baking soda it's not ramen without kansui
I know you're not really active atm, but hoping you see this. I'm considering getting one of these so I can make the low hydration style noodles I love at home. Was wondering if you found this to be worth it and recommend getting one. Also curious how much you got yours for?

Crazy... It looks so new :):):) I got mine from ebay, at the pictures it looked like yours, in reality it was a big mess... Dirty and fatty. And the wood broke. Do you have an idea where to get a replacement?
now don't get too excited i understand japanese stuff is made to last but this thing looks old and it definitely looks like it needs some TLC . can't wait to see it in action 👍

I have a contraption handed down in my family commonly used in making of vermicelli pasta during the year and making fried condements during Diwali a festival of light. this thing was a pain to get stuff fixed if broken all in hope to relive childhood memories

Just find some ramen noodle rollers, I'm sure they are universal, if not talk to a local metal worker, old machines are the easiest
