I also didn't have sketch under utilities. The equivalent for me was:
Category insert - command sketch

If you don't see "Utilities" in the shortcuts section of the video, search for the specific item he looks for (e.g. "sketch," "line," "circle," etc.) Then set the same shortcut he uses. It's the same item, just not under the Utilities section.
