Zero-Chop Vegetarian Chili

  • Another quick and easy chili recipe for our channel! I've made a couple of different chili recipes on our channel which I'll link in the video. This one is the simplest of all because it's "no-chop," meaning I used a bag of frozen, chopped onions and peppers instead of taking the time to chop fresh vegetables. It makes a large pot of chili that will be great throughout the week during these cold, winter months. Enjoy!
    No-Chop Vegetarian Chili
    Ingredients:
    --1 bag frozen chopped onions and peppers
    --1 recipe TVP (Bob's Red Mill brand) or 1 recipe of your favorite meatless ground
    --2 T. olive oil
    --1 packet taco seasoning
    --1 tsp. paprika
    --1 tsp. garlic powder
    --1/4 tsp. crushed red pepper (optional, and to taste)
    --1 28 oz. can crushed tomatoes
    --1 14 oz. can fire-roasted diced tomatoes
    --1 10 oz. can Ro-tel
    --1 can vegetarian chili (or chili beans)
    --1 can black beans, drained and rinsed
    --1 can pinto beans, drained and rinsed
    --1 c. tomato juice (or broth)
    Directions:
    1. Add frozen onions and peppers to a large pot with 2 T. olive oil and turn heat to medium-high
    2. While these sauté, follow the package instructions to rehydrate the TVP, or cook your favorite meatless ground in a separate pan as per package directions.
    3. Add seasonings to pepper/onion mixture: taco seasoning, paprika, garlic powder & optional crushed red pepper. Stir well and turn the heat down to medium low and continue to simmer while you open the cans of ingredients
    4. Add the rehydrated TVP and stir well while it continues to simmer and infuses the spices into the TVP.
    5. Add the crushed tomatoes, diced tomatoes, Ro-tel, vegetarian chili, black beans, pinto beans, and tomato juice (or broth). Stir well and bring to a simmer.
    6. Cover and simmer for 20 minutes. Serve with your favorite toppings like cilantro, shredded vegan cheese, or crushed crackers.
    7. Store remaining chili in the fridge covered. It's even better the next day!
