Lina is so lucky, my host family (from my longtime ago au pair experience) never treated me as part of the family. I wasn't even allowed to sit at the table with them during the meals. I would have to wait in my room for them to finish the meals so I could pick up my plate (their leftovers) and have it alone.

Rissois can be filled with almost anything. What you ate was shrimp rissois ( “rissois de camarão”). There are cod rissois, meat rissois, tuna rissois, etc

Initially, I thought you were Portuguese because of your name (which is actually my name too), but then I realized it's actually your husband who is Portuguese 😅. Definitely, if I ever get the opportunity to visit Las Vegas, I'll make sure to stop by one of your donut shops to try them! For organizing all the gf flours (which is always a lot of work) I bought containers and wrote labels to put the flours in so that they were easy to find and neat, and put them on a pull out rack, just a little suggestion

Rissóis are made with olive oil not butter... Boil water with salt and olive oil, then add the flour and mix until a large ball of dough is formed... That's is how to make Rissóis dough🙄
