    Pandan Rice Cake is a traditional Nyonya dessert, it's very simple and easy to make, Its texture is soft and bouncy . By adding pandan to coconut milk its traditional unique combination, it gives the rice cake tastes better and looks more pleasing.
    食材料:
    230克粘米粉
    50克木薯淀粉
    20克绿豆淀粉
    80克细砂糖
    500毫升椰奶
    500毫升班兰汁
    1茶匙盐
    蒸盘尺寸 6x6 寸
    Ingredients
    230g rice flour
    50g tapioca starch
    20g green bean starch
    80g castor sugar
    12 pieces pandan leaves
    1 tsp salt
    500 ml coconut milk
    500 ml pandan juice
    pan size: 6x6 inches

    Thanks for sharing your recepie. I remember eating it when I was young. The kueh was very nice and the colour of this kueh was white colour. Now yours will be much more flavourable with the pandan and the colour (beautiful).

    1. 是使用新鲜椰奶吗?盒装(较浓稠)的可以吗?
    2. 可以改用7寸圆模吗?
    3. 是凉水/开水上锅呢?

      早上好,我是用新鲜椰奶,盒装的有分椰奶(milk)和缩浓椰奶(cream)。你要用椰奶(milk),如果觉得浓可以参水稀释到如牛奶般的浓稠度。7寸圆模可以的只是成品比較矮点,要水烧开后以中火上锅蒸。谢谢🙏

      你可以使用紫薯粉或食品级紫色素+500毫升水来替代食谱里的500毫升班兰汁,制作方法如视频。谢谢

      早上好,我是用散装在烘培店买的,是来自中国的纯绿豆淀粉,至於印尼的是條装预拌粉我就没有用它来制作过这道食谱无法提供意见。谢谢

    Can I replace the green bean starch with Tepong Hoon kueh?

      Sorry, i have no experience of adding Tepong Hoon kueh~a premix flour, to this recipe..if you're unable to source the green bean starch, you can omit it, then as replacement, add in additional 20g tapioca starch. Thanks🙏

    Can I add egg into the ingredients?

      Rice flour and egg have the same bouncy characteristic in baking, hence, adding egg to this recipe will increase the bouncy texture of the rice cake. indirectly it will sacrifice its softness too. in order to retain the cake's softness, you need to increase the other ingredient~tapioca starch, how much an extra of it needs to be added will be based your own liking. Thanks
