You can give yourself because there's one thing that's reallistic about the inventory: it's never empty. All "empty" slots are filled with air. But it's also special, as a dropped item of air immediately despawns and having air in your inventory only marks an empty slot.
Oh, so that is how they removed it as an obtainable item.
What's also interesting, last like I looked at de-obfuscated minecraft code, I couldn't find any sort of "delete_block" method or anything. When you break a block, it just calls "set_block" and sets it to air. Same principle

I could see this being useful in a fighting map. You could use different swords or axes made to look like air as a way to upgrade a standard punch or something. Dunno if I’m making any sense or not but a way to level up an attack without “using a weapon” is basically doable now with that command

Technically eating air would make you denser. It would make more sense with something lighter than air itself.
It also wouldn't make sense with something lighter since you are still consuming the mass but your volume doesn't change. So it's now more mass in the same volume, so get still more dense then before

It would make you less dense. Air is less dense than a person is, so filling your body with it would decrease your density.

Well, you actually INCREASE your density since you're consuming the atoms in the air, therefore gaining mass while also not changing your volume. So if anything gravity should increase not decrease.

it might be a glitch but in bedrock you can eat an apple at full hunger, I think it might be some glitch related to the fact you can eat golden apples at full hunger so the game might think that apples are golden apples or sum
We got tile-air-name, why don't we have tile fire, earth, water name?
For fire, there was the Fire block.
For water, we had Water and Water Source.
And for earth, literally everything starting from Dirt downwards.

Steve and my wallet now have something in common. Steve can have his inventors full of air and my wallet is full of air.
Imagine Steve is in a room that is fully enclosed with no way that oxygen can get inside. This means Steve can collect all of the air in that room and store it in a chest and then suffocate.
I expected eating all this air to be like the Sprite Challenge where you eventually belch it all out and return to normal. The Fizzy Lifting Drinks
I recently got back into actually playing Minecraft (I mainly just watched it) and this was the most recent version last time I actually played the game. Glad to see this version again :)
Why this happens is because the air item model still uses the black and purple missing texture, it's just that the model contains no faces to render the texture on. The eating particles have their own model (a small square sprite) that uses the texture of the eaten item.

I'm pretty sure air blocks exist because that allows generated structures to not be full of stone & stuff when they form underground. The structure specifically reserves air blocks in open rooms. (Maybe caves use that too? I'm not sure.)

In code, there actually is also an air block and "empty" fluid too. This sort of thing is considered good programming practice, since a lot of time the code doesn't have to handle an empty slot/block specially this way. Without them, every bit of code would need to make sure they check whether the slot is empty before accessing values, or you'd get a crash.

I think the behaviour for the particles is because the model file also contains a section for the particles where you enter the texture used for the particles that you get for eating that item or breaking that block or walking on that block and as air isnt intended to be eaten or spawn particles when "broken" or "walked" on it makes 100% to do it like that but you can just change that with a resourcepack

Fun fact: The reason the 'tile.air.name' item exists in 13w38b and no other snapshot is because in that version the game's internal representation of blank space was changed. Before that update, there was no 'air' block, the game simply interpreted any numerical ID of 0 as literally nothing there. Since they were planning on phasing out those numerical IDs eventually with namespaced ones (this was finally completed in 1.13), they had to make air a proper block so they wouldn't have to handle a 'null' block in the namespaced ID system.
The implementation of this in 38b however was a bit sloppy, any systems that previously expected ID 0 to be nothing (such as blocks or mobs that would drop ID 0 to mean they had no drops) caused them to drop air instead.
