These mushrooms don't absorb much water because their gils are so tiny in comparison to their surface area. If you're talking about oyster, trumpet, or lionsmane, etc. those absorb a LOT of water.
We've been adding a dash of balsamic to ours and it is wonderful. Err on the side of less, as it can over power easily.

I guess you can puree it and leave some pieces to side and then add later it will be a creamy soup with bits of mushrooms.
