if I were running a stereo in am I correct that would be through the inputs on the back? Line level?

Yeah, Use the RCA ins for I pod, stereo, lp whatever and then the RCA outs to go to a USB interface or a board. The overall volume controls the aux input volume and then the mic volume is controlled by the individual channels volume controls.
