Fish pulao is a delightful dish where tender fish pieces are gently cooked with fragrant basmati rice infused with a blend of warming spices like cumin, cardamom, and cinnamon, along with the aromatic flavors of sautéed onions, ginger, garlic, and green chilies. Fresh herbs like cilantro and mint, along with a splash of lemon juice, add a burst of freshness. As the fish simmers with the rice, it absorbs the rich and harmonious mix of spices, resulting in a mouthwatering combination of sweet, spicy, and tangy flavors that's perfect for any occasion.
Ingredients
Basmati rice 350 gms
For fish first marination
King Fish fillets - 4 big size fillets
1/2 lemon juice.
Dry Masala for fish
1 tea spoon of ginger garlic paste
black pepper 1 tea spoon
turmeric powder 1 tea spoon
garam masala 1 tea spoon
tadoori masala 1 tea spoon
red chili powder 1 tea spoon
coriander powder 1 table spoon
kashmiri red chili powder 2 tea spoon
salt 1 tea spoon
fish cooking
cooking oil 2 table spoon
for flavorful rice cooking
1 green capsicum
1 big sliced onion
2 carrots
1/4 cup of green peas
3-5 green chilies medium size
1 tomato
cooking oil 1/4 cup
cumin seeds 1/2 tea spoon
black pepper 1/2 tea spoon
green cardamom 4 cardamoms
star anise 1
and 1 bay leaf
1 tea spoon salt
water as required
some freshly chopped coriander and mint leaves.
Process and Method
take fish fillets in a plate and apply lemon juice and ginger garlic paste on both sides
of the fish and keep aside.
take a mixing bowl and add black pepper 1 tea spoon, turmeric powder 1 tea spoon
garam masala 1 tea spoon, tadoori masala 1 tea spoon, red chili powder 1 tea spoon
coriander powder 1 table spoon, kashmiri red chili powder 2 tea spoon, salt 1 tea spoon.
mix all well and apply this masala thoroughly on both sides of fish, keep some masala aside
which required further at the time of final cooking rice with fish.
now rest aside fish for 20 minutes.
take 350 gms of basmati rice in a bowl and wash and clean, soak it for about 30 minutes before cooking.
now on medium heated pan add oil, and fry fish from both sides, till it is cooked well.
take cooked fish in a separate plate.
now heat a kadai on medium heat and add oil in to it.
now add cumin seeds 1/2 tea spoon, black pepper 1/2 tea spoon, green cardamom 4 cardamoms
star anise 1 and 1 bay leaf.
and give a nice stir for aroma.
now add green chilies and sliced onions in to it and fry onion until onions become translucent.
now add ginger garlic paste and fry it for 2 minutes.
now add green capsicum, 2 carrots, 1/4 cup of green peas, 1 tomato and salt.
and fry all for 2 - 3 minutes.
time to add soaked rice in to it, and fry rice for 2 minutes.
then add water in to it and mix well, and cover and cook it until all water get reduced from rice.
after that remove the cover and sprinkle some prepared dry masala and some freshly chopped coriander and mint leaves on it.
now arrange fish fillets on the top and cover and cook for 5 - 7 minutes on low flame.
remove cover and serve hot.
