Your ability to come up with fresh ideas for burgers is pretty insane. I really like that you don't do an apples to apples comparison and make each burger special. It makes the video more interesting and makes sense when venison and shark wouldn't really compare with just cheddar cheese and a burger bun anyway. You could even recreate this idea with tacos, samosas, sushi, hotdogs. Possibilities are endless.

its kinda hard to watch how he just keeps putting more and more stuff to the burger. im pretty sure you could remove one or two ingredients from all of the burgers and it wouldn't make it worse
There's this place, here where I live (northeast Brazil), that is specialized in ostrich meat. As strange as it may seem, they make sun-dried meat (it's kinda like beef jerky) from ostrich. I also found the flavor very similar to beef. Weird.

incase you ever do try to remake the oyster and octopus burgers: you could make the breading thicker so the oyter meat doesnt fall apart or try to bread them first then coat in egg wash before breading again make sure to keep abit of eggwash after breading a second time so you have a easier time making them not stick to the pan for octopus: put water in the pot, but check from time to time that it has not dried too much. After 40 minutes, drain the octopus and transfer it to a blender with the egg, Parmigiano cheese, breadcrumbs, parsley and a pinch of salt. Pulse for about 30 seconds to chop and mix ingredients. With this dough, prepare the burgers by giving them the classic patty shape
Now you need to try to make Bake and Shark which is a beloved street food in Trinidad and Tobago. It is known for its delicious combination of fried bread (bake) and fried shark meat, along with a healthy portion of toppings.
Do this as an international series. Like take the game from Specific countries and make burgers with toppings just for those countries. Then do a ranking later on for "world's best burger" like a tournament on the best of those!

I do wonder if you had the octopus burger more of the consistency of a takoyaki (adding more batter to help bind it) if it would have done better, same with the oysters.
What about a bunch of invasive species next? Like Florida pythons, lion fish, and the like 🤷♂️ I also had alpaca and guinea pig in Peru, those could be neat to do.
If you wanna try out an octopus smash-like burger-thing, why not make it a takoyaki patty? Cook a dollop of batter like a pancake on the griddle but add in thin strips of octopus. Might be a good experiment?

To be fair, a few years ago, it was quite common to see stalls selling kangaroo and ostrich burgers at festivals etc, here in the UK at least. And there was even an ostrich burger place in my city for a couple of years. But it really doesn't seem to be so common any more...
All of those look amazing and I would totally smash! ...but I feel like all of the toppings and condiments would totally overpower the flavor of any of the patties
