    I’ve made these about ten times since finding this recipe. Never using raw jalapeños again, these are amazing on tacos, nachos, burrito bowls, everything!!

      Do they smell bad when opening the jar? Pickled radishes a while ago and smells like a jar of facts every time!

    I did the recipe. A jalapeno marinade that blows your head off is a miss. Absolutely not the case here. I can taste the fruitiness of the jalapeno itself. Actually not hot at all but delicious.
    Update: 29/12/2022, I just made an other batch of jalapeno marinade. love it. Thank you Chef John.

    If you instead put the jalapenos in the jar and then pour the boiling brine over, they will retain their color and their crunch. Let them stay for a week or so in the fridge for maximum taste :)

      I have to wait a week??? I dunno if I can. I tasted one straight out of the brine and already know I won't be able to keep my hands off the stuff. Now ... what to do about burning hands from contact with the jalapenos during chopping and deseeding. *wry smiley*

      @@fendersmb no. Everthing chef John says, only pour the boiling brine over the sliced jalapeños after you stuff them in the Jar. Don’t boil the jalapeños if you want to retain their crunch.

    I used to boil my brine but these days I just wash and pack my vegetable of choice into a jar +garlic (aromatics if you like). Boil some water from the kettle and add a bit to it to some salt (rock salt) to dissolve it a tad. Then I add disttilled vinegar to the jar (about less than halfway) the salt and water mixture add a bit more of the water from a kettle then top off with regular water.
    Faster works everytime. If people want precise measurements then find a recipe online because I ain't your guy for such things.

    I just like to take the old juice from store bought jalapenos and when Im doing eating those save the juice and put my own peppes in that and let them sit for over 30 days in the frig. Works out pretty good.

    I don't rinse, I got this just how I like it, never buying the mushy stuf again. Thanks so much for this great recipe.
    1 tsp. sugar, 2 Tbs. salt, 2/3 cup white vinegar, 2/3 cup water, 5 sliced jalapenos, 1/4 sliced onion, 8 carrot slices, small pinch oregano. boil, add everything, cool, put everything in a big mason jar, cool completely, cover and refrigerate. good and spicy. I eat them with my burritos- refried bean, mexican rice, (taco meat or rotisserie chicken and hot sauce), cheese, rolled in a big softshell, put on foil with a spray of oil, put in 350 oven for 25 minutes. Have with sour cream, guac, shredded lettuce with ranch dressing and pickled jalapenos. It's hard to eat the whole thing.

    Thank you so much for your recipes. This is the 3rd time I have made them. Love them! No need to buy from store. I bought 10 large jalapeño and some pickling cucumbers to make 2 batch each. $3.00 spent. By the way I used only 2 tbsp of sugar. Also did not follow direction once and boiled one batch for the 10 minutes. Wow did those come out hot!

    Vinegar, water, pinch of garlic. Put in a jar, and refrigerate. That's all I do.
    There's no real need to boil, unless you want them the same day. About 4 days later, they're done. But you can obviously eat them whenevet.
    I sometimes even use an old jalapeno jar. You'd never know the difference. So easy.

    I'm fermenting a hot sauce with jalapenos and I needed a way to use up the rest of these!
    The hot sauce I'm doing has garlic, onions, mango juice, sweet bell peppers and jalapenos. Should turn out well!
    Update: These turned out delicious! I used 2 tbsps of honey and three cloves of garlic and they are yummy. I mean, they blast the jarred stuff out of the water.

      The final product did not taste like honey. I would make them again (probably will since I'm growing my own jalapenos)...

      Ah! The reason I used honey is that my household doesn't eat granulated sugar (except when making desserts), so I had honey on hand too.
      The vinegar tasting brine sounds delicious too.

    Will these turn out kind of mushy, or crunchy? I vastly prefer pickled jalapenos that have a crunch to them, and won't just melt in your mouth.

    Thank you for pronouncing jalapeño correctly. Nothing irks me more than people that say "jalapeenio". There are zero words in the Spanish language that make the eeee sound! 😉👍

    @datacash hey just saw your question and the jars Chef John used in this video usually are called "mason jars" and the brand name one usually finds in the grocery store is called "Ball or Kerr" jars. You have to purchase the jars, then separately the lids for sealing them if you are planning on using a proper canning method.

    Just wanted to say I've made these and theyre great. I would disagree that most of the heat is removed
    from these though, because mine still had a good bite to them. Fun thing is that people will actually eat these.
    Plain jalapenos usually get passed over after one or two bites from guests.
    For those of you cant understand why anyone would want to pickle a jalapeno, i've got to assume youre just...
    I dont know, extremely sheltered? Everything has been pickled somewhere by someone. People like different things.
    If you like them plain, then just cut 'em up & serve them.

    Looks great. I'm storing fresh jalapeno's from the garden. None of the pickling videos talk about long term storage. I assume if I get multiple jars, I can give them a hot water bath & they'll store.

    all I do is top off storebought pickled jalapenos with freshly cut ones.preserves them but they keep their crunch and flavour and heat.

    Can I leave out the sugar? If there's one thing I hate, it's a sweet pickle. How crisp are these jalapenos, by the way? I love mine to have a nice crunch to them. Mushy jalapenos is always a depressing time.

    @YoBootyStinks ive never had that problem i boil it because im re-using jars such as a tomato sauce jar. its only for a few seconds (top and jar separated). i think the only way possible for it to break is if your have the lid on allowing pressure to build inside the jar. (^^tad)

      That brine is fine for sauerkraut pickled onions asparagus etc amazing salt brine and dill garlic and some pepper or picking spice beautiful

    @andreilucaci81 ...If you don't add vinegar, you're not pickling them. The whole point of this recipe is to pickle the jalapenos. You might as well just slice em and have em plain.

    Jefe (chef in Español) the correct name is Jalepeño (with the little squiggly tilde over the N). Saludos de Rio de Janeiro, where we speak Portuguese so if you thought that the national language of Brazil is Spanish, that would be your second error of the day. HAVAFUNDAY

    @TtheAnimal Jalapeños don't have enough spice to burn your hands with the oils unless you are super sensitive. They will burn your eyes some what, but not too bad. The only ones what burn your hands to an uncomfortable level are like thai chilies, or habaneros. Something of that magnitude. If you want you can always were powder free latex gloves.

    @gerry3x this is a common pickling brine, I do the same thing with red onions for an amazing salad or taco topping.
