  • In this video we share a traditional recipe combo Idiappam & Stew
    Vegetable Stew
    Fresh grated coconut 2 cups
    Mixed vegetables carrot, beans,cauliflower,peas,potato 2 cups
    Butter 1 tsp
    Bayleaf1
    Cinnamon
    Cardamom2
    Cloves 5-6
    Cinnamon a small piece
    Greenchilli 2
    Salt to taste
    Onion 1
    ginger garlic paste 1 tsp (optional)
    Pepper powder a pinch
    Lemon juice 1 tsp
    Idiappam
    Riceflour/Idiappam flour 1 cup
    Salt a pinch
    Hot water as required
    Coconut oil 1-2 tsp

    Ending - mama and mami conversation - the best!
    I can relate to it too as I have forgotten to add an ingredient after doing all the hard work. Thankfully this is a rare occurrence.

    I add Finely Chopped Ginger and Thinly Sliced Sambaar Onion and a Few Corns of Crushed Pepper, Sautaued till Light Brown in Ghee, and Put as Garnish in Stew Before Serving.... Very Good Flavour

    Lovely to see you again after a long time. And hear you too. I have been busy with grandchildren and house repair work. I now see you are in a new kitchen. Have changed your house, or just redone your kitchen? But It was nice to hear mama too. I make the same stew ifcourse without onion for appam. And idiapoam, , I still make home made flour, and I have my husbands Patti s wood and brass press, so heavy!!!

    I have always felt the idiappam process to be laborious. But you are doing it with ease! Can the same process be done in traditional idiappam press in a tripod?

      You can dry roast it and mix with curry powder, or it can even be used as a face scrub with aloeveragel

    What should be the ratio of coconut shreds to water ? Like if I use 1 cup of grated coconut ….how much water should I add for grinding ? Should it be same for all the 3 extractions ? Also some say the we should grind it fine while some say it should be coarsly ground . Please clarify .

      You can use 1:1 that's fine. Grind it to a fine paste to extract milk

    Hello I am tulu speaking and my mom use to do what you call idyappam but we had growing up a big iron presser with a stand and my mother use to grind the rice boiled rice thick on a stone and then heat the batter to form a dough then make the elongated balls of the dough steam in the idli cooker all the dough. I distinctly recall that as soon as they were steamed cooked she would take each of them in the presser which was in a three legged stand and one person would turn the handles and use their whole strength to push the dough and we would eat the semadha adhya. With coconut milk mixed with jaggery and Ellachi powder. Or with chicken gravey . We are bunts from Mangalore we eat non veg . But usually in mumbai we loved to eat with coconut milk .
    I am wondering because the rice is different did you always steam later . Can I use the chakli press as I live outside India . My mother still has that stand in her attic.

      Oh yes ! I remember my mother using that tripod too! Nowadays we get with a "steering wheel " kind of top which we rotate as presser.Try it this way with the chalk press ,it is very easy

    Aunty in the end lemon juice was added. Normally we add coconut oil and curry leaves at the end. Shall try with lemon juice
