How to make Macarons

- Hi and welcome back to my kitchen. Macarons are so perfect as a small treat or used for decorating cakes. In this weeks video tutorial I am going to show you how to make French macarons.
Not to be confused with the coconut macaroon, these small biscuits or cookies are almond and meringue based and sandwiched together between a delicious filling.
In this video I am going to go through all the ingredients you will need and how to prepare your macarons.. I really hope you like them and you enjoy the video!
The ingredients you will need to make around 30 complete macarons is:
85g - Icing Sugar
80g - Ground Almonds
80g - Caster Sugar
60g - Egg Whites (Usually around 2 medium eggs)
Flavouring of your choice if you choose
I then baked them in the oven at 130 degrees Celcius for 10 minutes on the middle shelf.
For the chocolate ganache in the center you will need:
250g- White Chocolate
100ml - Double Cream

Thank you for sharing your recipe. For the first time in forever I've made it twice and both times it came out good. Not as perfect as yours but it had feet and didn't crack so I am happy. Will try to make another batch tomorrow. Hope the french macaron gods are still on my side then. :)

Hi Sophie, they can take a little practice but they are so much fun to make, so definitely give them a go x
Italian macarons are more technical and considered superior (can't remember why!). These are a simpler version.

Had to rewatch this tutorial. I've seen a few different ones on making macaroons and yours is the easiest one to follow and quite frankly the only one that makes sense. I love seeing the purple 💜 lol. With your help I think I'm going to give it a try. I grew up thinking the coconut drops were macaroons. What is the difference and do they go by a different name? Hi Lynz, great video ! I want to start making my own macarons for cake decorating and plan on using your recipe ! I was just wondering how to go about flavouring macaron shells . I’d like to make chocolate , lemon , salted caramel , pistachio and raspberry macarons as well as vanilla and am unsure how to go about going this ❤️

Hi Melanie, I am so glad you like the video, thank you. In regards to the ganache because the cream has been heated it is the same as if you use it to cover a cake. The ganache can stay at room temperature for a few days and still be ok. Just keep it in a cool place.

Hi,Linz!thanks for the recipe!I have such a question.You have measured your icing sugar and almond flour and mixed them together.But while sieving the mix there were a lot of pieces of the almond left in the sieve.I mean the weight has changed, hasn’t it?Or it doesn’t affect the recipe much?Thanks !Aysel
Hi Aysel, this is a great question. I actually ground down most of the almond mixture until there were just a few of the shells left so it would have only been a few grams. Because I didn't want the video to be too long I sped up this section and cut to it all done. What you can do is add in a few extra grams of almonds at the start and then if there are any left you can discard these. I hope this helps x
I don't push/force the almond meal mix through the sieve. And I never worry about loss of weight. And they always work :-)

Do you have the merengues recipe?
They look so pretty. Mine stick when they have cooled even though i cook them for longer at a higher temperature. Any suggestions?
Its possible that the air it too humid when your cooling them after baking. I keep my air conditioner on in the summer when I make them.

HI Charlie, Yes you can use almond flour instead. This will be alot finer than the ground almonds to start with.

Hi Parth, I have never actually made meringue without eggs, but I have looked it up and there are a few vegetarian recipes for macarons that use aquafaba instead of egg whites but you would definitely need to test this as this is not something I have tried. I hope this helps.

Mam....can we make macarons without almond flour.....plz tell me the recipe
Hi Linu, I used ground almonds to make these as you can't easily buy almond flour where I live. I then used the food processor to grind them down a little smaller before putting them through the sieve. So if you don't have almond flour you can use ground almonds. The full recipe is in the description below the video.

Hello , You can also replace the almond flour by pistache nuts which you have to grind the same as almonds.

Unfortunatly You didn't show if you could sift all of the almonds through the fine sift....cause it looks like that wouldn't succeed.
Hi Biance, Sorry I didn't want the video to be too long. I did sift the almonds through the sift, there was only a tiny amount that was too large to fit through. I hope this helps
