I'm not Canadian, but I live nextdoor figuratively speaking, and lemme tell you, these rocked my world the first time I found them in a local bakery. MAGNIFICENT treats!
Spent some years in upstate New York and loved going to Toronto. Had a Nanaimo bar sundae at a little diner there and fell in love with them. Emily, try a Southeastern twist and make them with chopped pecans instead of walnuts! The woody notes of the pecans really complement the dark chocolate and the coconut IMO.
i swear the ones i have had all have had coffee flavoring in the custard, i thought it was standard. i'm not from canada so maybe it's the pacific northwest twist on them. it's delicious though
The only time I got to go to BC I was inundated by people yelling at me to try them, and I was actually a little put off by how excessively sweet it was. This looks much better! It's like how a box brownie is way sweeter than one you make from scratch.
Homemade are deeeefinitely better than store bought! Use unsweetened chocolate for the top & unsweetened coconut and a pinch of salt in the bottom - the middle is sweet but the top & bottom should balance it out 🙌
@@EmilyDuncan I was there for a Business Thing and it was a catered function so they had like one million Nanimo bars. I took two small bars, which seemed like a good number, but my teeth started aching in that that "you're too old to eat Creme Eggs, idiot" way halfway through the first one. A half-cup of sugar for the entire base sounds much better. I think I will surprise my wife with these! 💪
Canadian here - I love the concept of Nanaimo Bars, but I never enjoy them in actuality, probably because I don’t like dried sweetened coconut. Maybe I will try your recipe, and leave out the coconut...
There must be a way! Would fresher/unsweetened coconut make a difference, maybe? Or you can just up the nuts, and maybe toss some chopped dates in there for the stickiness...?
Driving from Seattle, I've jumped the boarder and caught a ferry to Nanaimo and drove to Victoria for amazing raves... If only I knew about Nanaimo bars back then, I could have stopped at a shoppe and gotten a Nanaimo bar instead of just going to Timmy Ho's... Because you can't get a Nanaimo bar at Timmy Ho's.
Definitely very similar! I think graham crackers sometimes have cinnamon and are a little less sweet, if you’re swapping for the recipe? But a very effective swap, for sure
@@EmilyDuncan Admittedly, I like coconut milk in various Asian dishes, but the flavor probably isn't very noticeable. Plus it's liquid, so the texture isn't a concern.
I once had a British girlfriend who thought it was hilarious when she saw Bird's Dessert Powder in the "gourmet" section of an American supermarket. In England it was common as Jello.
I have never heard of this before, I'm obviously not on Gordon Lightfoot's level. :D I'm need to try this, if only to attempt to live up to Gordon Lightfoot. :) Thanks for sharing this.

The recipe looks great, except I hate shredded coconut. To me, they're not much better than the shavings from those tiny plastic pencil sharpeners.
I used to feel that way too, but have honestly fallen in love with coconut and coconut-adjacent products in the last few years 💁♀️
