    200 grams of fresh green chillies

    1 tablespoon of gram flour (besan)
    1 teaspoon of turmeric powder
    1 teaspoon of coriander powder
    1 teaspoon of cumin powder
    1 teaspoon of fennel powder
    1 teaspoon of amchur (dry mango powder)
    Salt to taste
    Fresh coriander leaves for garnish
    *Instructions:*
    1. *Preparation of Green Chillies:*
    Begin by washing the green chillies thoroughly. Pat them dry with a clean cloth.
    Remove the stems and slit each chilli lengthwise. If you prefer less heat, you can remove the seeds.
    2. *Cooking:*
    Heat the oil in a pan over medium heat. Once the oil is hot, add mustard seeds and let them splutter.
    Add cumin seeds and a pinch of asafoetida. Sauté for a few seconds until the seeds start to crackle and release their aroma.
    Now, add the slit green chillies to the pan. Stir them well to coat them with the tempered oil and spices.
    Reduce the heat to low and add gram flour. Mix thoroughly so that the gram flour coats the chillies evenly. This not only helps to balance the spice but also adds a nutty flavor to the dish.
    Add turmeric powder, coriander powder, cumin powder, fennel powder, and salt. Mix everything well to ensure the chillies are well-coated with the spices.
    Cover the pan with a lid and cook for about 5-7 minutes, stirring occasionally. This will allow the chillies to soften and absorb the flavors.
    Once the chillies are cooked and the raw smell of gram flour disappears, sprinkle amchur powder. This will add a tangy twist to the dish.
    Give everything a final stir and turn off the heat.
